Shio Koji


Unleash the enzymatic power of Koji with this unique marinade that may become your new essential secret weapon in the kitchen!

Meat marinated with shio-koji will be juicer, more tender and will caramelize beautifully. After a day or two with a light coating it will come out perfectly seasoned throughout - not just the surface! Protease will break down protein into amino acid aka flavour. Beef will taste beefier, chicken will taste more chickeny, salmon will… well you get the vibe.

Can also be used to pickle vegetables - take a dive into Tsukemono!

There's not much shio-koji can't improve. Use as an alternative to salt for a more umami rich seasoning.
